20 mins prepServes 2
A healthy dinner idea featuring almond flour-crusted chicken fingers baked to perfection, served with roasted asparagus, zucchini, avocado, kalamata olives, and a homemade honey mustard dressing.
1. Preheat oven to 400F (200C). Line a baking sheet with parchment paper.
2. In a shallow dish, whisk the egg. In another shallow dish, combine almond flour, flax meal, paprika, garlic, salt, and pepper.
3. Dip each chicken breast strip into the egg, allowing excess to drip off, then coat thoroughly in the almond flour mixture.
4. Place the coated chicken fingers on the prepared baking sheet.
5. Bake for 20-25 minutes, or until cooked through and golden brown.
6. While the chicken bakes, roast asparagus and zucchini until tender.
7. For the honey mustard dressing, whisk together Dijon mustard, maple syrup, apple cider vinegar, and water until smooth and to your desired consistency.
8. Serve the baked almond flour chicken fingers with roasted asparagus, zucchini, sliced avocado, kalamata olives, and a side of honey mustard dressing.
